Why does the amount stay the same when I switch unit?

Because switching unit is a change of question, not a conversion. If you typed 10 and switch from gram to ounce, you want the value of 10 ounces, not the ounce equivalent of 10 grams. A troy ounce is 31.1034768 grams, and a kilo is a thousand grams.

Will a jeweller pay me this amount?

No. This is the reference value of pure metal: 24 karat for gold, 999 fine for silver. Jewellery is usually lower purity and worth proportionally less, and a dealer takes a spread on top. Treat the figure as the market level, then compare the offer you are given.
